Spines Instead of Gills

Most mushrooms produce their spores on gills or in tubes on the underside of the cap. Hericium erinaceus takes a third route: it does not form a cap at all, but instead a white mass from which hundreds of soft spines hang, up to five centimeters long. The spores sit on their surface.

Hence the German names hedgehog mushroom and monkey head mushroom. The name lion's mane comes from English and became established through trade. Botanically, it belongs to the family of tooth fungi.

Why it is protected in Germany

In the wild, Hericium grows on wounds of weakened or dead deciduous trees, in Europe especially on beech and oak. It needs old trees with injuries, which have become rare in managed forests.

Accordingly, the mushroom is rare. In Germany, it is on the Red List and is specially protected; it may not be collected. For food and extracts, it is therefore cultivated exclusively, mostly on substrate blocks made from sawdust and bran. This works relatively well with this species, which is why Hericium is now also available in trade as an edible mushroom.

A mushroom with an unusual texture

As an edible mushroom, Hericium stands out. Its flesh is fibrous and tender at the same time; in texture and taste it is reminiscent of crab or lobster meat. In the kitchen, it is therefore often pan-fried and used as a seafood substitute.

For the extract, that does not matter: what counts there is not the texture, but what can be drawn out of the dried mushroom.

Why extract and not powder

Mushroom cell walls consist of chitin, the same substance as insect shells. Humans do not have an enzyme to break it down. Ground mushroom material therefore passes through the digestive tract largely unchanged; the nutrients remain trapped inside the cells.

A hot-water extraction breaks open the cell wall and dissolves out the water-soluble components, especially the polysaccharides. That is the difference between an extract and a simply ground powder, even if both can carry the same milligram amount.
