What L-glutamine is

L-glutamine is the most abundant free amino acid in the human body. It is found in both blood plasma and muscle tissue at a much higher concentration than any other.

Biochemically, it is classified as a non-essential amino acid because the body can produce it itself. Through food, it is found in all protein-rich foods, bound within their proteins.

This is where the information we are allowed to provide ends. No health claims have been approved for L-glutamine in the EU. We could fill the gap with hints, as is common in this product category. Instead, we state what can be verified: the substance, the amount, and the purity.

A peculiarity in preparation

L-glutamine is not permanently stable in aqueous solution. It breaks down over time, and the warmer and more acidic the liquid is, the faster this happens.

In practice, that means: mix it and drink it promptly. A shake prepared in the morning and drunk at midday is no longer the same. Cold or lukewarm drinks are preferable to hot ones.

The 300 ml in the recommended serving is no coincidence. L-glutamine is one of the less soluble amino acids, and in a small glass some of it quickly remains at the bottom.

From the fermenter, not the lab

Amino acids for food are today produced almost exclusively with bacteria. The most important producer is Corynebacterium glutamicum, which was isolated in Japan from a soil sample in 1956 and laid the foundation for the entire amino acid industry. It grows on sugars from molasses or starch, releases the amino acid into the nutrient medium, and it is then crystallized out of it.

The L in the name is not just decoration. Amino acids occur in two mirror-image forms, L and D, and proteins consist exclusively of L-forms. Chemical synthesis produces both in a mixture, whereas fermentation produces only the L-form. That is why good-quality material always says L-glutamine and not just glutamine.

Glutamine is not glutamate

The names are so similar that they are constantly confused. Glutamic acid and its salt, glutamate from seasoning, are a separate amino acid. Glutamine differs from it by an additional amide group at the end of the side chain.

The difference is small, but these are two different substances with two different roles. So anyone buying glutamine is not buying a flavor enhancer, and anyone avoiding glutamate is not avoiding glutamine.

Where it occurs in food

Glutamine is widespread in proteins and in many of them is the largest single building block. Wheat protein, milk protein, and soy protein are especially rich; the word gluten and the amino acid share the same root.

A normal mixed diet provides several grams a day. The difference from the powder is not in the substance, but in the form: in food, it is bound into protein chains and is only released during digestion; in powder form, it is already free.

What appears in a certificate of analysis

For a single-ingredient product, the test certificate is the actual product description. It tests content and purity, typically with values of at least 98.5 percent, as well as water content, sulfate ash, heavy metals, and microbiological parameters.

One test point stands out: the specific rotation. It measures the angle by which a solution rotates the plane of vibration of polarized light, and it is the classic proof that the L-form is actually present. A mixture of L and D would not rotate at all.
