Peptide size instead of raw material quantity

Intact collagen is a triple helix and practically insoluble in water. Only enzymatic hydrolysis breaks this structure down into short peptide chains. How short they end up depends on which enzymes are used and how long they are allowed to work.

VERISOL® is a registered trademark for a peptide fraction whose manufacturing process is defined. The reason for buying such a raw material lies in reproducibility: every batch goes through the same defined process.

We do not attach any performance promise to that. In the EU, collagen peptides do not carry an approved health claim, and using a brand name as a substitute for one would be dishonest. We state the raw material, amount, and process.

Peptides are measured in daltons

When people talk about a defined peptide fraction, they mean molecular sizes. These are measured in daltons, the unit for the mass of individual molecules. Native collagen is in the range of hundreds of thousands of daltons, gelatin in the tens of thousands, and collagen hydrolysates typically fall within the range of a few thousand daltons.

A hydrolysate never consists of chains of a single length, but always of a distribution. It is determined by gel permeation chromatography, in which the molecules are separated by size. It is precisely this distribution that defines a branded raw material.

Why enzymes and not acid

Protein can also be broken down with strong acids or alkalis; this is cheaper and faster. The downside: the breakdown is hard to control and does not stop at a defined point; in addition, sensitive amino acids are damaged in the process.

Enzymatic hydrolysis, by contrast, works at a mild temperature and neutral pH. Which enzymes are used, in what sequence, and for how long determines the final chain lengths. The enzymes are then deliberately deactivated by heating. The result is only reproducible if each of these steps is specified.

What a branded raw material is legally

A registered trademark is a matter of trademark law, not official approval. It means that a raw material comes from a specific manufacturer using a defined process. It says nothing about approved health claims.

This distinction is more important than it sounds, because a brand name with ® can easily look like a seal of quality on a package. It is not one. What it actually provides is traceability: the same manufacturer, the same process, the same specification in every batch.

Why it tastes like nothing

Freshly produced collagen hydrolysate smells and tastes distinctly like broth. Before it becomes a flavor-neutral powder, it is filtered through activated carbon and ion exchangers, which remove odor compounds and color, before being spray-dried.

Two practical notes: The powder absorbs moisture, so the bag should be kept closed and the spoon should be dry. It dissolves best when sprinkled onto the liquid rather than the other way around. Unlike gelatin, it does not set again, even in the refrigerator.
