Historical significance:

Shiitake (Lentinula edodes) originated in East Asia and has been valued there for over a thousand years. The earliest written references come from China during the Song Dynasty. In Japan, the mushroom was considered a special delicacy and was traditionally cultivated on the wood of the shii tree, which is also where its name comes from. Shiitake later spread worldwide through trade routes and is now one of the best-known edible mushrooms of all.

Botanical characteristics:

Shiitake belongs to the Omphalotaceae family. It is a brown gilled mushroom with a characteristically curved cap that can reach a diameter of 5 to 12 centimeters. Its cultivation on hardwood, especially oak or shii tree logs, is typical. The mushroom prefers a moist, temperate climate and grows naturally on dead wood.
