A laurel plant, not a spice bush

Cinnamomum verum belongs to the laurel family and is therefore related to bay laurel, camphor tree, and avocado. It is an evergreen tree native to Sri Lanka and South India. Sri Lanka was called Ceylon until 1972, hence the trade name.

What is used is not the wood, but the inner bark of young shoots. For harvesting, the trees are regularly cut back hard, so they sprout again from the rootstock. What is sold in trade as a cinnamon stick is dried and rolled bark.

Ceylon and cassia are two species

What is sold as cinnamon in Europe usually does not come from Cinnamomum verum, but from related East Asian species grouped under the collective term cassia. They are cheaper to cultivate and make up by far the largest share of world trade.

A well-known difference between the two lies in the coumarin content: it is significantly lower in Ceylon cinnamon than in cassia. The Federal Institute for Risk Assessment has dealt with this several times, which is why the distinction is now also known outside specialist circles.

How to tell the species apart

With sticks, the distinction is clear. Ceylon cinnamon consists of many thin layers of bark rolled into one another from both sides; in cross section, it looks like a cigar. The stick can be crumbled with your fingers.

Cassia cinnamon, by contrast, forms a single, clearly thicker layer of bark that curls inward from both edges, creating a double spiral. It is hard and can hardly be broken. This feature does not help with ground powder; there, only the species name on the package remains.

Harvesting and processing

It is preferably peeled during the rainy season, because then the bark comes away from the wood most easily. The outer cork layer is scraped off, the remaining inner bark is cut into strips and laid out to dry, where it rolls up on its own. The rolls are then nested together and dried further.

Our capsules contain ground bark powder, not extract. There is therefore no extract ratio here: 500 mg of powder is 500 mg of bark.

There are two different types. Ceylon cinnamon comes from Cinnamomum verum and is therefore also called true cinnamon, while cassia cinnamon comes from related species in East Asia.
