The only one of our medicinal mushrooms that people also eat

Organic Shiitake capsules from Vitalplant contain extract from Lentinula edodes. Reishi is too bitter, Chaga too hard, Cordyceps too rare. Shiitake, by contrast, is found in every well-stocked supermarket.

From the tree that gave it its name

The name comes from Japanese and is meant literally: Shii refers to the Pasania tree, an East Asian relative of the oak, while take simply means mushroom. So it is the shii mushroom, named after the wood on which it was traditionally grown.

To this day, part of the harvest grows on inoculated hardwood logs outdoors, a method that has been practiced in China and Japan for centuries. Worldwide, Shiitake ranks second in cultivation volume, behind button mushrooms.

In cooking, it is valued for its pronounced umami flavor, which comes from guanylate and even intensifies when dried.

Edible mushroom and extract are two different things

The fact that a mushroom is familiar as a food does not change the rules for the extract. No health claim is permitted in the EU for mushroom extracts.

We therefore do not use culinary familiarity as a back door for claims we would otherwise not be allowed to make. What is stated here is the type, the amount of extract, and the origin.

Dosage compared and quality

At 500 mg per capsule and two capsules a day, Shiitake is the highest-dosed single mushroom in our range. For comparison: Reishi is at 300 mg per capsule, Hericium and Cordyceps at 400 mg.

The extract powder comes from certified organic cultivation, inspection body number DE-ÖKO-039, origin non-EU agriculture. The capsule contains only extract and the vegan shell made of hydroxypropyl methylcellulose, no anti-caking agent, no filler. Amber glass largely blocks UV light.

Behind Vitalplant is Christian Lazar, a licensed pharmacist with over 35 years of professional experience at Stern Apotheke.

Named after the tree

The name comes from Japanese and is meant literally: shii refers to the sawtooth oak, an East Asian relative of the oak; take simply means mushroom. So the shiitake mushroom is named after the wood on which it was traditionally grown. Botanically, it is called Lentinula edodes and is a gilled mushroom.

Like reishi and hericium, it is a white-rot fungus: in wood, it breaks down not only cellulose but also lignin. It is precisely this ability that makes it cultivable, because it allows it to thrive on dead hardwood as its sole food source.

Log cultivation and substrate block

There are two ways to grow shiitake. Traditional log cultivation uses deciduous wood logs that are drilled and inoculated with spawn. The wood is then left outdoors, and the fungus colonizes it over several months. Only then do fruiting bodies form, and a log inoculated once will continue to produce for years afterward.

Modern substrate cultivation uses compressed blocks of sawdust and bran and greatly shortens the time until the first harvest. Both methods are in use today. Worldwide, shiitake ranks second in cultivation volume, behind button mushrooms.

Why dried tastes more intense

Shiitake is considered one of the most umami-rich mushrooms there is. The responsible compound is guanylate, a compound from nucleotide metabolism. Remarkably, the flavor is not lost when drying; it actually intensifies: during drying, enzymes become active that release guanylate from the mushroom's own RNA.

That is why dried shiitake are often the first choice in East Asian cuisine, and why their soaking water tastes so rich that it is reused as broth.

Why extract and not powder

Mushroom cell walls are made of chitin, which the human digestive tract cannot break down. Ground mushroom material therefore passes through largely unchanged, with its nutrients remaining locked inside.

Hot-water extraction breaks open the cell wall and draws out the water-soluble components, especially the polysaccharides. So there is a world of difference between an extract and a powder, even if both list the same milligram amount on the package.

Frequently Asked Questions

Take 2 capsules daily with plenty of liquid with a meal. This corresponds to 1,000 mg of extract powder per day and is therefore the highest daily amount among our single mushrooms.

From Japanese, and it is meant literally: shii refers to the Pasania tree, an East Asian relative of the oak, and take simply means mushroom. So the shiitake mushroom is named after the wood on which it was traditionally grown. Its botanical name is Lentinula edodes.

Because they are two different things. On the plate, the fresh or dried mushroom is eaten with its high water content. In the capsule, there is an extract, i.e. a concentrate, with 500 mg per capsule and a fixed amount. As an edible mushroom, shiitake is still a good thing, just on a different scale.

Because of its pronounced umami flavor, which is due to guanylate. Notably, this flavor even intensifies when dried: dried shiitake are more aromatic than fresh ones. In a capsule, that does not matter, as the coating bypasses the taste.

Part of the harvest still grows today on inoculated hardwood logs outdoors, a method that has been practiced in China and Japan for centuries. Worldwide, shiitake ranks second in cultivation volume, behind button mushrooms. Our extract powder comes from certified organic cultivation, inspection body number DE-ÖKO-039.

At 500 mg per capsule and two capsules a day, Shiitake is the highest-dosed single mushroom in our range. Chaga is also at 500 mg, but is taken only once a day; Hericium and Cordyceps are at 400 mg, and Reishi at 300 mg. In the Organic Vital Mushrooms Complex, there are 125 mg of Shiitake per capsule.
