Five herbs and spices, four of them from one family

Vitalplant's Organic Stomach Tea is the simplest blend in our tea range: five ingredients, all from certified organic farming, with no flavorings.

The herbal blend

Anise, fennel, coriander, and caraway all belong to the umbellifer family. That explains why they work so well together in terms of flavor: their essential oils are chemically related and create a rounded, sweet-spicy aroma.

Anise brings the clearest sweetness, shaped by anethole, which is also found in star anise and fennel. Fennel adds a milder, slightly earthy note. Coriander contributes citrus nuances, while caraway provides the strongest and most aromatic component.

Peppermint leaves are the only ingredient from another family, the mint family. Their menthol provides the fresh counterpoint to the four umbellifers.

Preparation

Pour 3 g of tea over 200 ml of boiling water and let steep for 5 to 8 minutes. For seeds and fruits, the longer steeping time is worthwhile, because the essential oils are released more slowly than in leaves.

A kitchen tip: if you lightly crush the seeds in a mortar before pouring on the water, you get a much more intense aroma. The tea is suitable for any time of day and is naturally caffeine-free.

A family, four of five ingredients

Anise, fennel, coriander, and caraway all belong to the umbellifer family, botanically Apiaceae. It is one of the most important spice families of all: carrot, celery, parsley, dill, and lovage also belong to it.

The family is recognizable by its flower cluster, the umbel, in which all flower stalks extend from one point like the spokes of an umbrella. What is remarkable is the contrast within the family: it includes both poison hemlock and water hemlock, two of the most poisonous plants in Europe. Anyone gathering umbellifers themselves therefore needs reliable species knowledge. For cooking and tea blends, only cultivated produce is used.

Where the aroma sits

What is commonly called a seed is botanically a fruit, more precisely a schizocarp: when ripe, it splits into two halves. Its wall contains fine channels, the oil ducts, in which the essential oil is enclosed.

This leads to two things. First, fruits in an infusion need longer than leaves because the oil first has to escape from these channels; hence the steeping time of five to eight minutes. Second, lightly crushing them in a mortar is worthwhile because it breaks open the channels.

Four oils, four characters

Anise and fennel share their main component: anethole, which is responsible for the sweet note in both. Caraway, by contrast, is shaped by carvone, the same compound that also characterizes dill. Coriander contributes linalool, which gives it its citrus-like direction.

The fifth ingredient comes from a different family: peppermint belongs to the mint family, and its menthol provides the fresh counterpoint to the four related oils.

Harvest and organic certification

Umbellifers are often harvested slightly underripe. Fully ripe umbels break apart and let the fruits fall to the ground, which is why waiting until full ripeness would cost the harvest. They are then dried gently to preserve the essential oils.

All five ingredients come from controlled organic cultivation, certified according to the EU Organic Regulation with the certification body number DE-ÖKO-039. The certification covers the entire path from field to filling, including the processing facilities, and is checked annually.

Cover the cup while steeping, otherwise the essential oils will escape with the steam.

Herbal teas like this one are made from completely different plants and are therefore caffeine-free, without anything needing to be removed from them. That makes this tea suitable for any time of day.

It is possible, but the second infusion is much weaker. Most of the essential oils are already released during the first steeping. Unlike green tea, where multiple infusions are common, it is hardly worth it with an herbal and seed blend.
