Six ingredients with goji and pomegranate

Vitalplant's organic men's tea combines fruit, seeds, and leaves into a fruity, tart blend. Six ingredients, all from certified organic farming.

The blend

Goji berries make up the largest share. Lycium barbarum belongs to the nightshade family and is therefore more closely related to the tomato than to classic berries. Dried, the fruits add a sweet-tart note.

Lemongrass adds the citrus accent, fenugreek seeds a strong, spicy component. Fenugreek is a legume and is widely used as a spice in Indian cuisine.

Pomegranate peels contribute tannins that give the infusion its bitterness. Curly mint leaves and nettle leaves round out the blend with fresh and herbal notes.

Preparation and flavor

Pour 3 g of tea over 200 ml of boiling water and let steep for 5 to 8 minutes. The pomegranate peels make the infusion noticeably more bitter with a longer steeping time, because tannins are released slowly. Four minutes produce a milder result.

The tea is naturally caffeine-free and suitable for any time of day.

Pomegranate peel was once a tanning agent

In pomegranates, the tannins are not in the juice, but in the leathery peel and the white membranes. Their concentration there is many times higher than in the flesh, as anyone can confirm who has bitten into the white skins while removing the seeds.

For that very reason, the peel was not treated as waste for centuries. In Persia and Anatolia, it was used for tanning leather and as a dye for carpet wool, where it produces shades from yellow to black depending on the mordant. It was only this byproduct that made the pomegranate a fruit with nothing left over.

Lemongrass is a grass

Cymbopogon citratus has nothing to do with citrus fruits. It is a tropical sweet grass that forms dense clumps and is propagated by dividing the rhizome, not by seed.

The lemon aroma comes from citral, the same compound that also characterizes lemon balm and lemon peel. In Southeast Asian cuisine, the fleshy lower part of the stem is used fresh; for tea, by contrast, the dried leaves are used, which are cut into fine rings before drying so the oil can be released when poured over with hot water.

A seed that takes time

Fenugreek seeds are hard, angular, and release their ingredients only reluctantly in an infusion. Whole seeds take significantly longer than leaf material; if bruised or crushed, it goes faster.

There is also a peculiarity: the seed contains mucilaginous substances that swell in water and give the infusion a slightly soft texture. In Turkish cuisine, the same effect is used when the spice paste for pastırma is mixed from ground fenugreek.

Why fruits infuse differently from leaves

In a blend of leaves, fruits, and seeds, several processes run side by side, at different speeds. Essential oils from mint and lemongrass are largely in the water after two to three minutes. Tannins from pomegranate peel and pigments from dried berries take longer, because the water must first penetrate the denser tissue.

The infusion therefore changes noticeably while steeping: first fresh and fruity, then increasingly bitter. The recommendation of five to eight minutes describes exactly this range. Four minutes produce a light tea, eight a strong one; neither is wrong.
