Soluble and insoluble

Dietary fiber falls into two groups with very different properties. Insoluble fiber such as cellulose and lignin is found in grain husks, nuts, and vegetable fibers; it swells only a little and passes through the digestive tract largely unchanged.

Soluble fiber, by contrast, dissolves in water and serves as food for intestinal bacteria. This includes inulin, pectin, beta-glucans from oats, and acacia fiber. This powder consists almost entirely of the soluble type. That is why the mixed drink does not thicken either, unlike psyllium husks, which belong to the swelling variety.

Inulin is a chain of fructose

While most plants store starch, i.e. chains of glucose, members of the daisy family use fructose for this purpose. These chains are called inulin. Chicory, Jerusalem artichoke, dandelion, salsify, and artichoke all belong to this family.

How long the chains are depends on the source, and you can taste it: Short chains, such as those from agave, have a slightly sweet taste; long chains from chicory root are practically flavorless. For the small intestine, both are equally indigestible because it lacks the right enzyme.

Jerusalem artichoke, the sunflower with a tuber

Helianthus tuberosus is a true sunflower, just one with storage tubers on its roots. It originates from North America and came to Europe in the 17th century, where it first became popular as a vegetable and was later displaced by the potato.

There are plenty of German names: earth artichoke, earth pear, Rossler, Jerusalem artichoke. Unlike the potato, it is frost-hardy and can stay in the ground over winter; it is harvested as needed. Once you have it in your garden, it is not easy to get rid of.

What 59 grams per 100 grams helps classify

The German Nutrition Society recommends at least 30 grams of dietary fiber per day for adults. On average, this target is not reached in Germany; actual intake is below it.

For context: 100 grams of wholemeal bread provides around 7 grams, an apple just over 2, a serving of lentils about 8. A fiber powder can help bridge the gap, but it does not replace vegetables or whole grains, because these foods provide far more than just fiber. Here, dietary supplement quite literally means what it says.
